Thanksgiving isn't just about turkey. We talked with Fresh Cafe & Market crew members Margeaux Adams, 23, and Joshua Spain, 28, for their best tips and tricks for making your favorite holiday dishes vegan-friendly.

1. Fruits and veggies are undeniably colorful and nutritionally balanced. Add them to your spread for a gorgeous and healthy Thanksgiving table. Create a leafy green salad with sliced pears, pomegranate seeds, raw almonds and pair with balsamic dressing.

2. Our go-to, vegan-friendly pantry staples are: coconut cream to add subtle flavor and creaminess in place of heavy cream; Earth Balance to replace butter and vegetable broth to replace animal-based stocks.

3. Try our new take on a classic sweet potato casserole. Start by caramelizing a red onion on low heat with a tablespoon of coconut oil and a dash of sea salt. Meanwhile, steam four pounds of purple sweet potatoes until soft. Fold sweet potatoes with a half cup of creamed coconut and a splash of maple syrup. Top with caramelized onion, raw walnuts and shaved coconut. This vibrantly purple mash is sure to please herbivores, turkey lovers, and even the little ones alike.
