Happy tailgating, football fans! I've got two recipes to show your school spirit, no matter which team you're cheering for.
Cardinal and Gold Kabobs
Total time: 30 minutes
½ cup apple cider vinegar
½ cup honey
½ cup mustard
1 teaspoon dried terragon
1½ pounds pork tenderloin, cut into 1-inch cubes
4 red bell peppers, cut into 1-inch cubes
4 yellow bell peppers, cut into 1-inch cubes
Salt and pepper, to taste
2 tablespoons olive oil
Mix first four ingredients and set aside. Thread skewers with pork and peppers, alternately. Lightly drizzle kabobs with oil and season with salt and pepper. Brush kabobs with glaze. Grill over medium-hot coals five minutes on each side, or until internal temperature of pork reaches 145⁰F, basting with more glaze.
