Proof's Roasted Bone Marrow: better than butter
It may look funny, but if you're adventurous, the Roasted Bone Marrow ($17) from Proof is something definitely worth trying.
As a lover of all kinds of food, and someone who has eaten some of the world's craziest things — live octopus, squirrel (yes, the cute furry tree animal), chicken testicles, animal innards — if you're all about trying new things, give this dish a go. The worst thing that can happen is finding out that bone marrow is not your thing. And that's OK. The pale pink, oily-sticky-brainy-looking marrow isn't for everyone.
First things first, it will take at least 20 minutes to cook. It comes with three beefy bones full of melted marrow drizzled in a sweet balsamic reduction. Red onion jam, caper salad and toasted crostini breads are also included in this "fear factor" dish. When piled together, it creates this buttery, sweet yet acidic taste. Yes, I'm going to say it: "I can't believe it's not butter." No, it's not exactly a substitute for butter, but dang, does it come close.
This platter of goodness not only tastes delicious, but it looks pretty, too. You can thank the colorful crostini toppings for that. The best topping? The caper salad. Made with cilantro, lime juice and crunchy shallots — it's no wonder this crostini is eye candy.
Awesome fact: Proof is one of the only places in the state of Iowa that makes this dish regularly. We're pretty lucky that it's in the heart of Des Moines — downtown. You don't have to travel to someplace exotic or be on a TV show to try this.
