A new Texas-style barbecue restaurant is opening in the former location of Guru BBQ at 300 W. Martin Luther King Jr. Parkway, #170.
Aaron Brown, 37, and Corey Butcher, 41, plan to open Butcher's BBQ & Brews on July 9, with a soft opening, followed by a grand opening. The restaurant is currently being remodeled.
In the idea stage between Brown and Butcher for three years, Butcher's will feature Texas-style smoked meats flavored with dry rubs and hickory wood blend, including brisket, ribs, chicken, pulled pork and sausage. Appetizers and sides will also be available. Butcher's plans to use as much Iowa meat and produce as possible.

Brown said everything will be made from scratch, all the way down to the barbecue sauces, and service will be mostly fast-casual, with table service and brunch available on Saturday and Sunday.
A full bar with eight beers on tap will be featured with a focus on bourbon cocktails and Shiner Bock, a Texas-made beer that's dear to Brown's heart.
Butcher, born in Des Moines but raised in Texas, currently owns five franchises of Fuzzy's Taco Shops in Iowa, along with health clubs in the Dallas, Texas area.
Brown will act as the pitmaster and general manager of the restaurant. Butcher's also plans to offer catering opportunities with the use of another wood smoker on a trailer.
The restaurant will employ about 30 people in various service and kitchen positions.
Butcher's will be open 11 a.m. to 11 p.m. Monday through Thursday; 11 a.m. to midnight Friday; 8 a.m. to midnight Saturday; 8 a.m to 8 p.m. Sunday.
