Ben Norris, who operated The Spot food truck in the Des Moines area for five years, has opted for a more permanent location.

Norris will debut The Walnut this fall at 1417 Walnut St. in a new development that includes first floor retail and six apartments on the upper two floors.

Norris said he will continue to offer the sandwich menu from the food truck but will expand the menu in the restaurant, which has a much larger kitchen. “We will still have our made-to-order sandwiches and sides using locally sourced food,” he said.

Old favorites like the Royal Bird, a sage-rubbed chicken breast with crispy prosciutto, lettuce, tomato, onion, red wine vinegar mayo and Parmesan will be offered along with new sandwiches, he said.

“I always try to have chicken, pork, beef and vegetarian options,” he said.

Norris, 30, said the 3,500-square foot space will seat about 100 inside and another 30 on the patio.

He said he was glad to be able to hone his restaurant skills in the food truck and had acquired a strong enough following to make The Walnut possible.

“I always saw the food truck as a five-year commitment,” he said. “I was either going to add a fleet of trucks or expand" to a permanent restaurant, he said.

He sold the food truck to a couple in Stillwater, Minn., and landed on the new Walnut Street development.

When The Walnut opens, the redeveloped building will be full. Other commercial tenants include Amanda Reynal Interiors, Horizon Line Coffee and Oliver+james Salon. The residential units also are leased.
